Our story
My goal is to provide the highest quality of gluten free products that taste just as good as their wheat counterparts. I take pride in my name, "I Can't Believe It's Gluten Free". That is why I decided to turn my cooking and baking skills into making gluten free foods. As anyone who suffers from wheat sensitivity or Celiac's disease, they know how hard it is to find fresh quality foods that are gluten free. Buying the gluten free flours is expensive and most are not ground to fine flour and they can still be a little gritty.
So I took out my mill "grain grinder" and began to grind my own rice flours. The flour I grind resembles the texture of normal gluten flour.
To my surprise it also bakes better when freshly ground. I then began a quest to explore and experiment with different kinds of rice flours such as red and black rice flours. I picked up a normal cookbook and decided that I am going to convert these recipes into healthy gluten free recipes. Also, for those with special allergy needs such as no eggs, sugar, yeast or dairy. I can convert all my recipes to meet these special dietary needs.
