JM Manokan is a Chicago-based Filipino food business bringing the authentic flavors of Bacolod City, Philippines, to the Midwest. Rooted in our family’s chicken inasal tradition dating back to 1985, we specialize in authentic Bacolod Chicken Inasal—charcoal-grilled chicken marinated in our signature blend of Filipino flavors, served with garlic rice and traditional accompaniments. We also produce our own shelf-stable Bacolod Chicken Inasal Marinade and signature Chicken Oil, available for retail purchase. Since launching in 2025, we’ve been sharing our family’s culinary heritage through local festivals, pop-up events, and retail partnerships.
