Our story
theNight.Kitchen is an Oakland-based small-batch, hand-crafted ice cream maker led by Ray Lai, a 25-year ice cream veteran who was Bi-Rite Creamery's first ice cream spinner and head ice cream chef at San Francisco's celebrated Ice Cream Bar as well as many other artisan ice cream shops. We craft super-premium, small-batch ice cream in a CDFA-licensed, permitted, and insured production kitchen — nostalgic classics alongside bold pan-Asian-inspired flavors. We bring a self-contained booth with freezer, tent, and friendly staff, and can serve either pre-packaged cups or full on-site scooping depending on the event's needs.
